White Bbq Potato Salad


Serves 6 - 8

2lbs. Russet or Red Skin Potatoes

2 Stalks Celery (diced small)

1/2 Red Onion (diced small)

1/4 C. Sweet Relish

1/2 C. Mama N Nims White Bbq

1/4 C. Miracle Whip Salad Dressing

2 Tsp Salt

2 Tsp Cracked Black Pepper

Peel and cut Russet potatoes or just cut the Redskins into 1 inch cubes. In a large stock pot cover potatoes with cold water and the 2 Tsp of salt. Bring to a boil and cook potatoes until fork tender. Drain potatoes and shock rinse with cold water. Keep potatoes draining while you cut the vegetables into small diced pieces. In a large mixing bowl, combine potatoes, vegetables, relish and black pepper. Fold in White Bbq and adjust moisture with the miracle whip salad dressing. Chill in the refrigerator before serving. Can be made up to a day in advance.
