Candy Pepper Chicken & Waffles

Waffle Ingredient List:

non stick cooking spray

1 1/2 Cups of Unbleached All Purpose Flour

1 1/2 Tbsp Granulated Sugar

Tbsp Baking Powder

1/4 tsp Table Salt

1 Large Eggs

1/2 Cup of Buttermilk

13/4 Cup Lowfat Milk

1/4 tsp pure vanilla extract

1/4 Cup Unsalted Butter, melted and cooled   to room temperature

Waffle Directions:

Lightly coat waffle maker with non stick coating spray and set to desired temperature. Put the flour, sugar, baking powder, and salt in a medium mixing bowl.  Whisk together. Separate the eggs, placing yolks and whites in two large mixing bowls. Put the buttermilk, milk, vanilla, and melted butter together into the bowl with the egg yolks and beat together until homogeneous. Pour the liquid ingredients into the dry ingredients and mix on low speed until just combined. Whip egg whites for 2-3 minutes until firm peaks form. Carefully incorporate the whites into batter base, half at a time. Be careful not to over mix. Pour batter onto pre-heated waffle maker. Quickly and carefully spread batter evenly. Set aside or place in oven on warm until your fried chicken is ready.

Fried Chicken Ingredients: 

6 - 4 oz Chicken Breasts

1 Cup of Buttermilk

2 Cups of Flour

1 Tsp of Granulated Garlic

1 Tsp of Granulated Onion

2 Tsp of Seasoning Salt

1 Tsp of Black Pepper

1 Tsp of Old Bay

1/2 Cup Cooking Oil

1/2 Cup Candy Pepper

Fried Chicken Directions: 

Heat cooking oil on medium heat in a 10" pan/skillet while you prep the chicken.

Slightly pound chicken breasts flat so they cook evenly. Coat chicken in buttermilk. In a bag,  (paper, plastic, or ziploc) add seasonings to flour. Shake the coated chicken in the seasoned flour. Make sure chicken is fully coated. Pan fry chicken for 3-4 minutes on each side until fully cooked. Drizzle melted butter on top of your waffles just before the chicken is ready.  Toss chicken in Candy Pepper and serve on top of your fresh made waffles! Top with syrup and enjoy!
